gut loving salad

Trying to narrow down what to have with dinner can be a challenging task, especially when you have limited time & ingredients. This side dish is light, refreshing & full of flavourful ingredients. Every ingredient that makes up this leafy green side is nutrient dense & gut has nourishing elements to help reduce systemic inflammation & support healthy healing. 
 
the nutrient know: 
ginger: contains gingerol, which has powerful anti-inflammatory & antioxidant effects
coconut oil: is a anti-microbial & anti-fungal MCFA, that is readily available to the body as energy 
garlic: has sulphur containing compounds that support the function of the immune system 
lemon: helps to detoxify the body from by stimulating the liver & relieve indigestion
bone broth: contains gut healing amino acids that support intestinal healing & the growth of healthy gut flora 
 
ingredients:
1 tbsp coconut oil
1 tbsp fresh grated ginger
1 tbsp finely chopped garlic 
1/4 cup classic chicken bone broth
juice from 1/2 organic lemon 
1.5-2 pounds spinach 
salt & pepper
2 tbsp raw or roasted almonds
 
directions:
Heat a castiron pan over medium heat & add 1 tbsp coconut oil. Once melted, add garlic & ginger, stirring consistently until the garlic becomes fragrant. Approximately 45 seconds. Add the bone broth & reduce to a simmer. Slowly add the spinach, & season with salt & pepper! Allow for some of the liquid to cook-off, & remove from heat. Transfer the spinach to a serving dish & squeeze the juice of two slices of lemon over the spinach. Sprinkle with almonds & serve!
